With my pregnancy I’ve been eating pretty healthy.. quite oddly I’ve been craving veggies! A far cry from ice cream, chocolate and pickled things when I was pregnant with my son. I guess it’s good right? I mean I really need to watch how much pounds I am packing on so with the healthy it will all balance out.
We have also been eating watermelon quite a bit too. With all the water content from it they make a great snack and hydration for me instead of constantly drinking boring plain water.
I’ve also stocked up on vanilla yogurt and that’s been my go to snack when I feel the hunger creeping up on me at odd hours of the day. With all the yogurt I could spare some for this quick and easy recipe.
I’ve seen frozen yogurt covered strawberries, blueberries, and grapes.. so I thought to myself “Why not watermelon?”
I got out my ice cube tray, filled it with my vanilla yogurt and then stuffed pieces of watermelon in them. Put them in the freezer and let them solidify. It only took an hour or two.
I popped them out and they made a nice cool treat! Easy Peasy! Great made to eat the day of :)
